Step 1: Stone Preparation
Soaking: Soak the whetstone in water for 10 minutes. This is crucial to fill the stone's pores with water, which prevents overheating and removes metal particles during the sharpening process.

Step 2: Selecting Angle and Position
Edge Angle: Tilt the blade to an angle of 15 to 20 degrees against the stone surface. Note: To help maintain this angle, an angle guide (Fixed Angle Guide) is recommended.

Knife Position: Position the knife at an angle of approximately 40 degrees relative to the length of the stone.

Grit Selection:

Use the lower grit side (e.g., 240# - 1500#) for rough grinding and quickly restoring a damaged edge.

Use the higher grit side (e.g., 2000# - 8000#) for precision grinding and achieving a delicate and sharper edge.

Step 3: The Sharpening Process
Movement: Apply mild pressure on the blade and run it back and forth along the stone, starting with the tip and moving towards the heel (near the handle).

Repetition: Flip the blade and repeat the same movements on the other side, maintaining the identical angle.

Important Notes
Always keep the working surface of the stone wet by adding water as needed.

When sharpening, always progress from the coarsest grit to the finest to remove burrs and polish the edge.
